If you're new to Vietnamese food, Saigon would be an excellent introduction. The restaurant is clean and professionally run, and the friendly servers are never too busy to describe unfamiliar dishes.If you're not new to Vietnamese food, this is the place for fresh, flavorful, authentic cooking.Personal favorites are the bun, or rice noodle dishes. Saigon's are the best I have discovered in Albuquerque. They're like layered salads, with fresh lettuce and aromatic herbs on the bottom, warm rice noodles in the middle and a choice of grilled meats on top. It is topped with a sprinkling of chopped peanuts. The dish is served with a deliciously tangy fish sauce "dressing."
It makes a quick, light, nutritious lunch for about $6 — one that I have often craved.
Fancier dishes are excellent also, such as broiled catfish with fresh herbs and rice paper, or the lemon beef salad. Seafood noodle soup is a feast large enough for several people to share.
